Indonesia is the most amazing place to find thousand of different cuisine in the world.The  richness of Indonesian food has been known all around the world. Peoples have their own recipes not influenced by another country but stand-alone as an original cuisine made by the past of  Indonesia.

The land produced so many kind of spices and some other sent  from another country give an effect to enrich the culinary from this pearl archipelago. From West to East, Indonesia has different typical of food caused by million ingredients specific from each. Spices widely used in the west part of Indonesia creating much variety of food which have strong aroma, spicy and hot. In many part of Indonesia, coconut milk very often used as an item that easily found, well produced and cheap.

In east part where spices are not easily to find, the food tasted more delight but still hot-spicy. Chilli always found in each region, as herbs ingredient in main course, or just as a vegetable side dishes.

Sumatera influence by Indian Food. However if you taste it several times, you will find the different between them. In the northest part curry filled by all product from meat and chicken is a favorite food, spicy, hot, thickened by coconut milk, and on the contrary, the southest part the food are tasted more sour, made by fruit and fresh vegetable.

1. Aceh Cuisine.

Lamb is widely use as cattle for the filling of many kind of Acehnese food. The food influenced by Middle East and Indian food. Combined with original recipe of Sumatera and Chinese food, they have special different kind of severe food. Acehnese food is always present as spicy food and fully aromatic.

Chinese food influenced and combined well in North Sumatera Food. Noodles is used and flavored with curry herbs and mixed also with seafood or meat. The Aceh noodle, either fried or boiled became popular in Indonesia and around.

For beverage, coffee from Aceh is very famous and spread around the world. Aceh coffee is one of the strongest coffee in the world. They also have Teh tarik. Made by using two metal glass, tea with milk poured over and over again from one glass to another glass and make a foam on the surface of tea when served

As the location is most close from India and Middle east, they have martabak as snack. Shallot, chives, garlic, minced meat wrapped by thin crust and served after fried in the griddle. They use curry soup for dipping and served with cucumber and shallot. Nowadays, martabak also filled with durian as popular snack there.

2. North Sumatera Cuisine.

North Sumatera, as a province in Indonesia is populated by many tribes, clan and small ethnic group. It caused this province has so many different kind of cuisine. The christian dominated almost of all part of North Sumatera, present as Batak people as biggest ethnic group in North Sumatera.

Medan, as a capital of the province strongly influenced by chinese. That made Medan cuisine tasted and appear as chinese food. Howsoever, they still have original cuisine as past used as food that have to serve in traditional ceremonies. Saksang is one of them. Made with pork or dog meat, Saksang is always presenting at the traditional ceremonies such in wedding or funeral ceremonies. Saksang use coconut milk, shallot, onion, pepper, lemongrass, ginger, galangal, turmeric and andaliman.

Influence of Chinese menus comes with noodle in some cuisine of Sumatera Utara. Kwetiau Medan (flat noodle appear like fettucine) cook with beef, bean sprout and other vegetable. Kwetiau Medan is one of the most spread cuisine to all part of Indonesia.

Nowadays, Medan has popular snack, brought by tourist to their home as souvenir. Bika ambon and Bolu Meranti are the example. Bika Ambon is a cake, sweet and made by eggs  and fermented cassava. Bolu Meranti appear like rolls cake covered by grated cheese.
